Healthy Lunch or Snack Ideas

Taking some time to quickly throw out a few recipes I've tried over the last few days. These were real winners in our home. Even little Chase had some quinoa pasta and loved trying some new foods. Sophia, my four year old, had 3 servings of the Peanut Butter Creme Cheese Bagels!  The Lemon Lime Juice was for me. I'm sure you could give it to your kids but it is pretty tart.


Peanut Butter Creme Cheese Mini Bagels
Ingredients:
1⁄4 cup 1⁄3-less-fat cream cheese spread
1⁄4 cup natural peanut butter (or sunflower seed butter)
1 tablespoon honey
8 whole wheat mini bagels, split
1 ripe pear, sliced
1 apple, sliced
3 oranges, peeled and sectioned
2 tablespoons sugar
1 tablespoon fresh lemon juice

Combine cream cheese spread, peanut butter and honey in a medium bowl. Beat with an electric mixer on low speed until blended. Spread about 1 tablespoon cream cheese mixture over the bottom half of each bagel; top with top halves of bagels.

If you have a few bucks to spare it is worth it. Luckily I found a Groupon and purchased it for a year at a incredible price!



Mixed Herb & Tomato Quinoa Pasta
Ingredients:
1 serving quinoa pasta
Coconut oil, for cooking
1 – 2 fresh medium-sized tomatoes, chopped
1 teaspoon parsley (fresh or dried)
1 teaspoon basil (fresh or dried)
1/2 teaspoon oregano (fresh or dried)
1/2 teaspoon pepper
Sea salt to taste

Directions
1.) Add quinoa pasta to boiling water over high heat, and simmer according to directions on pasta box.
2.) While pasta is cooking, heat a sauté pan over medium heat and add coconut oil.
3.) Chop tomatoes and add to sauté pan, stir for 1 minute over medium heat then turn to low heat and simmer.
4.) When pasta is done, about 10-12 minutes, add cooked pasta to sauté pan.
5.) Add spices and salt and pepper, stir for 1-2 minutes.
6.) Serve and enjoy!

Lemon Lime Green Juice
Ingredients:
  • 1 bunch of any green of your choice (collards, chard, spinach, kale, dandelion)
  • 2 cucumbers
  • ½ bunch herbs like parsley, cilantro or mint
  • 1 lemon with peel removed
  • 1 lime with peel removed
  • 1 green apple (optional for added sweetness)
Instructions:
  • Wash all vegetables thoroughly and place into a large bowl
  • Juice each vegetable in this order – greens, herbs, lemon, lime, cucumber
  • Stir mixture before serving
  • Rinse and clean juicer immediately
Notes
Please choose all organic ingredients if possible
